For the longest time, every morning for breakfast I was eating vanilla Greek yogurt topped with banana, cinnamon, sunflower seeds, sesame seeds, flax seeds, hemp seeds, and pumpkin seeds. Finally I decided, why not just combine everything, add some old fashioned rolled oats and some sweetener, and make it into a granola? Such a good decision on my part. This granola is so delicious, perfectly sweet, and healthy! It is a great way to start your morning or keep you satisfied as a snack throughout the day, whether you have it on top of your yogurt, with milk, or just plain.

Ingredients

  • 2 cups rolled oats
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup hemp seeds 
  • 1/4 cup unsweetened coconut flakes 
  • 2 Tbsp sesame seeds
  • 2 Tbsp flax seeds 
  • 1/2 tsp cinnamon 
  • 1 tsp vanilla
  • 1/4 cup maple syrup 
  • 1/4 cup melted coconut oil 
  • Dash of salt 
Instructions

Preheat oven to 350° and line a baking sheet with parchment paper.
In a bowl, combine oats, pumpkin seeds, sunflower seeds, hemp seeds, coconut flakes, sesame seeds, flax seeds, and cinnamon.
In a separate bowl, combine vanilla, maple syrup, coconut oil, and salt.
Pour over dry ingredients and mix well.
Place evenly on parchment paper lined baking sheet and bake for 10 minutes.
Take out and stir, then bake for 10 more minutes or until golden brown.
Let cool and then break apart.
Store in an airtight container.
