Hot take, but I don't like my macaroni and cheese baked! Instead, I like luscious and creamy stove top macaroni and cheese. The type you had when you were a kid out of the box. Some people may think i'm crazy, but in reality, you're just the crazy one.


The best part about this recipe is that its a one pot macaroni and cheese recipe. What does that mean you might ask... well you don't need multiple pots or pan, so minimal time cleaning in the kitchen. You don't even need to drain the pasta. The pasta soaks up the water and lets out starch will allows this dish to be extra creamy.

Add the past to boiling salted water and cook until 3/4 the way done.

Then stir in the milk, cream cheese, a pinch of cayenne, and a few dashes of hot sauce. Cook until al dente, about 2-4 more minutes.

Add the cheese and continue to stir until melted and creamy.

Remove from the heat and finish with cold butter.

Ingredients

  • 3 cups water
  • 12 oz pasta
  • 2/3 cup whole milk, plus more if needed
  • 2.3oz cream cheese, softened
  • 2.5 cups cheese of choice
  • 1.5 tbsp cold butter (plus more for richness)
  • Pinch of cayenne
  • Few dashes of hot sauce
  • Salt
Instructions

Add the three cups of water to a medium-large pot over medium-high heat. Season with salt and bring to a boil.
Once boiling, add the pasta and cook until 3/4 the way done (do not drain the pasta water). Then stir in the milk, cream cheese, a pinch of cayenne, and a few dashes of hot sauce. Cook until the pasta is al dente, about 2-4 more minutes.
Add the cheese and continue to stir until melted and creamy. Remove from the heat, stir in the cold butter, and season to taste with salt. If too thick, add a few tablespoons of warmed milk to thin it out.
