Taco Soup is loaded with ground beef, tomatoes, corn, black beans, onions and red bell peppers. This soup comes together quickly and is a great dinner for any night of the week. Enjoy all your favorite taco flavors in a bowl instead of a taco shell!

I love to serve one-pot meals at large gatherings. It makes entertaining so simple and this soup is especially fun when a toppings bar is added to the mix. My favorite additions to Taco Soup are sour cream, cilantro, avocado, jalapenos, lime and cheese.


WHAT TO SERVE WITH TACO SOUP

Taco soup is great with corn bread or a simple salad, but most often I serve with tortilla chips and my Easy Mexican Salsa.


HOW TO MAKE TACO SOUP IN A CROCK POT / SLOW COOKER

Brown ground beef with garlic, onion, red bell pepper and taco seasoning.


Add ground beef mixture and all ingredients (outside of the recommended garnishes) to slow cooker and cook on high for 4 hours or on low for 8 hours.


Garnish and serve.


HOW TO MAKE TACO SOUP IN AN INSTANT POT

Select the saute function. Brown ground beef with garlic, onion, red bell pepper and taco seasoning. Add all other ingredients (outside of garnishes) to the instant pot and give everything a good stir.


Close the lid and seal pressure valve. In manual setting, set on high for 10 minutes, then let pot release naturally.


Garnish with your favorite toppings and serve with tortilla chips.


HOW TO MAKE HOMEMADE TACO SEASONING

This is a great substitution for taco seasoning packets. It's easy to make and more than likely you have all the ingredients in your spice drawer. Double or triple this recipe to have extra on hand for all your favorite Mexican dishes.


  • 1 tbsp Chili Powder
  • 1 ½ tsp Cumin
  • 1 ½ tsp Onion Powder
  • 1 ½ tsp Garlic Powder
  • 1 ½ tsp Paprika
  • 1 ½ tsp Oregano
  • 1 ½ tsp Salt
  • 1 tsp Red Pepper Flakes


Store in an airtight container for up to 6 months. You will need 2 Tbsp for the soup and the seasoning recipe makes approx. 4 Tbsp.


NO BEAN TACO SOUP

Not crazy about black beans? Adding one cup of cooked rice is a great substitution for the beans.


IS TACO SOUP FREEZABLE

Absolutely! I love to double this recipe and freeze the leftovers. Be sure to let the soup cool completely before storing in a freezer bag. Label and date the bag. It's a good idea to double bag the soup before placing in freezer.

Ingredients
Soup
  • ▢ 1.5 lb Ground Beef
  • ▢ 1 small Onion Diced
  • ▢ 1/2 c Diced Red Bell Pepper
  • ▢ 2 cloves Garlic minced
  • ▢ 2 Tbsp Homemade Taco Seasoning
  • ▢ 1 10 oz Rotel
  • ▢ 2 c Water
  • ▢ 1 Tbsp Beef Base
  • ▢ 2 Tbsp Tomato Paste
  • ▢ 1 15 oz Black Beans (drained and rinsed)
  • ▢ 2 c Frozen Corn
Toppings
  • ▢ 1 c Cheddar or Colby Jack Cheese
  • ▢ Sour Cream
  • ▢ Cilantro
  • ▢ Lime
  • ▢ Sliced Avocado
  • ▢ Jalapeno
Instructions

In a dutch oven or large stock pot, brown ground beef with garlic, onion, red bell pepper and taco seasoning.
Cook 3 - 4 minutes to soften vegetables.
Add Rotel, water, beef base, tomato paste, black beans and corn.
Cover and simmer for 20 minutes.
Top with favorite garnishes and serve with tortilla chips.
Tips
  • If Rotel is too spicy for you, substitute a can of petite diced tomatoes and a can of mild green chiles.
  • Substitute one cup cooked rice if you want to omit the beans.
