Preheat the oven to 375 degrees and prepare a 9×13 baking dish by spraying it with nonstick cooking spray.

In a large bowl, combine the frozen potatoes, diced jalapeno, salt, pepper, paprika, evaporated milk, cream cheese, cheddar cheese, and pepper jack cheese.

Spread the potato mixture in the casserole dish and top with chopped bacon.

Combine the melted butter and bread crumbs and sprinkle over the top of the casserole.

    How do you combine cream cheese with frozen potatoes??? It would be just a hard clump even if it was softened to begin with after adding to frozen potatoes.

      Correct. It is a big lump that you spread out in the dish and bake. Even if you thaw potatoes it's all a big lump.
