Grilled fish, lemon brocollini, arugula, and air fried potatoes for day one of my health kick! Like most, I enjoyed my summer to the fullest and indulged in all the food. Excited to get out and hit up every patio possible, I may of over-indulged. To get back on my health kick, I hit it off with what I am calling a 'Power Plate'! This delicious plate is full of healthy antioxidant rich ingredients. Note that you can use any white fish for this recipe (I used haddock but should've done tilapia in my opinion).

Ingredients
For the Fish
- 2 - 3 filets of white fish (tilapia, cod, haddock, etc.)
- 1 cup parsley
- 1 lemon, zested and juiced
- 1/2 cup olive oil
- 2 minced garlic cloves
- 1 scallion
- salt and pepper to taste
- 2 cups diced potatoes
- 1 bunch of brocollini (sub brocolli)
- 1/2 tbsp paprika
- 1/4 tbsp garlic powder
- 1/4 tbsp dried parsley
- juice from 1/2 lemon
- 2 tbsp olive oil
- salt and pepper to taste
- arugula and sauce of choice (to serve)
Instructions
For the Fish
- Combine all ingredients (other than the fish) in a food processor or blender
- Marinate the fish in this for at least 30 minutes
- Pan fry, grill on bbq, or bake in oven (400F for 10-20 minutes depending on size and type of fish)
For the Veggies
- Combine all ingredients (other than arugula and dressing)
- Place in airfryer at 400F for 10-15 minutes shaking basket halfway (alternativley bake in oven)
- Cook until softenened then Add everything to a plate with some arugula.
- Serve with lemon wedges and dressing of choice

I am going to fix this as I love fish and can't wait to eat this and the potatoes. I don't eat much fried food and I have learned to love brocolli.
