I am a lover of all 15 min meals, the nutritious and healthy ones that make you feel satisfied and that you can put together in under 20 min on a busy work day.


For lunch, I usually try to have a balanced meal consisting of a protein, some carbs to keep me going, and vegetables for some fibers.


I happened to have snapper that day and figured why not fry some filets for lunch? So I created this fancy / elaborated looking meal, but that's in reality very simple and very quick to prepare.


So here's my recipe for pan friend snapper filets served over saffron rice.

Ingredients

  • - 2 fish pieces / filets
  • - 1 cup rice
  • - 1/4 tsp saffron threads ground and soaked in 3 tbsp water
  • - Vegetable oil for frying
For the Rub / Fish Marinade
  • - 1/4 cup flour
  • - 1 tsp paprika
  • - 1 tsp onion powder
  • - 1/2 tsp cumin
  • - 1/2 tsp nutmeg
  • - salt and pepper to taste
Instructions

Fish:
- heat up oil in a pan / wok until hot enough to fry (not deep fry, let the oil cover just about 2 inch of the pot in height)
- rub the fish with the spice rub and slowly place in oil, for about 12 min, flip mid way through
Rice
- in the meantime you’ll be cooking rice (cover with 2 cups of water and bring to a boil then reduce heat, cover and simmer for 10 min). Uncover and add the saffron water. Simmer for a few min.
Serve fish over rice. You can add some herbs for aesthetics.
