Chipotle Shrimp Bowls

Chipotle Shrimp Bowls coming at ya! Since moving and getting engaged, life it going 100 miles an hour. We have been making these bowls or similar versions so often we knew we had to share with you! Great for a busy day when you forgot to defrost chicken or ground beef for the recipe you were planning to make that night. Mix up your toppings and get dinner to the table without all the headache of defrosting. Check out the recipe below and let us know what you think!

Start making these Chipotle Shrimp Bowls by prepping. Thinly slice up your peppers, onion, chop the lettuce, and finely mince the chipotle in adobo sauce. Combine all the dry ingredients for the Chipotle Shrimp into a bowl, mix, and set aside. Start your rice if you choose to add rice as this usually takes about 20 minutes to cook. Also start your beans if you choose to add to the bowls. 

In a large frying pan over medium heat, add a tablespoon of butter to the pan. Let melt and add the peppers and onions. Add a pinch of salt and let these cook down, mixing every few minutes. After about 5-7 minutes move the peppers and onions to the wall of the pan, add the other two tablespoons of butter and shrimp to the pan. Toss in the dry seasoning and chipotle in adobo to the pan. Mix well and cook for about 7 minutes or until the shrimp reach 125 degrees internally. Remove everything from heat and begin to compose your Chipotle Shrimp Bowls. Start with the base as rice, add some beans, lettuce, avocado, peppers and onions, and the Chipotle Shrimp. Enjoy!

  • 1 lb shrimp devained and cleaned
  • 1 package spanish rice
  • 1 can black beans
  • 1 cup shopped lettuce
  • 3 peppers sliced thin
  • 1 yellow onion sliced thin
  • 1 tbsp salted butter
  • 1 avocado sliced and scooped
Shrimp Seasoning
  • 2 tsp garlic salt
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 tsp cumin
  • 1 tsp coriander
  • 2 tsp cornstarch
  • 2 chipotles in adobo sauce
  • 2-3 tbsp salted butter
