Crustless Ham and Broccoli Quiche

If you have leftover ham from the holidays this is the perfect meal to make. I wanted a quick recipe and I purposely left the crust to make it less caloric. Perfect recipe for those who want to eat light after the holidays.
Ingredients:
- 1⁄2 lb ham (chopped)
- 1 clove garlic, minced
- 1⁄2 small onion, chopped
- 1 cup broccoli chopped
- 1 cup mozzarella cheese,
- 1 cup low-fat milk.
- 4 eggs
- Pepper to taste
- Salt to taste
Step 1: In a pan sautéed garlic and onions. Make sure you do not overcook the garlic or onions.
Step 2: In a separate bowl mix the chopped ham, eggs and milk.
Step 3: Boil the broccoli until tender. I used regular Broccoli not florets and chopped some of the ends off. Then I chopped it in smaller pieces.
Step 4: Combine the onion, garlic, broccoli, ham and eggs mixture, add salt and pepper to taste. Pour into pie plate. Add the cheese on the top and bake for 45 minutes at 350 degrees until golden brown.
After you get it out of oven, let sit for 5 minutes before cutting. Serve it with your favorite salad, such as a garden or chop salad. Fruit is a popular side dish to serve with quiche as well.
