  • 1/2 cup plain flour
  • 1/2 cup self-raising flour
  • 1 egg, beaten
  • 1 cup whole milk
  • 600g frozen and thawed broccoli, separated into florets
  • 250g halloumi cheese, cut into cubes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

In a large mixing bowl, combine the flours, egg and mix, mixing to incorporate fully. Set aside.
In a microwave safe bowl, place the broccoli. Steam for around 4 minutes or until it has cooked and softened.
Add the broccoli to the mixing bowl and mix until combined. Add in the halloumi cubes and salt and pepper.
Spoon the prepared batter into hot, shallow oil, frying until both sides turn a rich brown color. Once cooked, drain the fritters on absorbent paper.
