Halloumi Broccoli Fritters

Ingredients
- 1/2 cup plain flour
- 1/2 cup self-raising flour
- 1 egg, beaten
- 1 cup whole milk
- 600g frozen and thawed broccoli, separated into florets
- 250g halloumi cheese, cut into cubes
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- In a large mixing bowl, combine the flours, egg and mix, mixing to incorporate fully. Set aside.
- In a microwave safe bowl, place the broccoli. Steam for around 4 minutes or until it has cooked and softened.
- Add the broccoli to the mixing bowl and mix until combined. Add in the halloumi cubes and salt and pepper.
- Spoon the prepared batter into hot, shallow oil, frying until both sides turn a rich brown color. Once cooked, drain the fritters on absorbent paper.
