When I was a kid, one of my favorite places to go was the pancake house at the ocean.


In addition to the regular maple syrup, they also served strawberry, pecan, and blueberry syrups!


My favorite?


Blueberry syrup.


Hands down.


Now that I follow the Trim Healthy Mama lifestyle, I avoid all added sugars.


And processed wheat products.


So pancakes with blueberry syrup from the pancake house aren’t something I would order anymore.


But that doesn’t mean I don’t still love that flavor!


I love making French Toast using sprouted bread, egg whites, and almond milk.


Honestly? I prefer French Toast to pancakes.


One day I decided to try making my own blueberry syrup, and guess what?


It was so easy to do!


The consistency is different from the kind at the pancake house that was probably made out of corn syrup.


But the taste?


So. much. better.

I make this easy blueberry syrup regularly now!


And since we’re friends, I want you to have this delicious treat in your life too.


How to Make Sugar Free Blueberry Simple Syrup

This easy sugar-free simple syrup recipe only needs three ingredients:


  • Water
  • Blueberries
  • Low Carb Sweetener

Just put those ingredients in a small saucepan and you’re practically done!


But.


If you really want your blueberry syrup to sing?


Then you’ll want to add my secret ingredient…

Lemon zest.


It really brings out the flavor of the blueberries!


One of my favorite fast breakfast recipes is this Blueberry Lemon Cheesecake Overnight Oats.


There’s something special about lemon and blueberries.


You don’t need much lemon zest, only about 1 teaspoon.


Be careful when you remove the zest to only remove the yellow part of the skin.


Don’t get any of the white part because that will make your syrup bitter.

Place your saucepan over medium heat, cover, and bring to a boil.


Once it boils, remove the lid and reduce the heat.


Let the mixture simmer for about 20 minutes.


The syrup won’t be thick.


Honestly it’s kind of like sweet blueberry water.


You can puree the mixture for a thicker consistency of syrup.


Or sprinkle up to 1/4 of a teaspoon of glucomannan powder or xanthan gum over the syrup about halfway through the cooking time.


Do You Need to Strain Blueberry Simple Syrup?

If you’re making this syrup to use in a cocktail, like these Watermelon Blueberry Mojitos, you will want to strain the berries out of the syrup.


Place a fine mesh strainer over a measuring cup or storage container and pour the syrup through the strainer.


You can discard the berries, or try adding them to some plain nonfat Greek yogurt for a delicious snack.

I like to use the back of my spoon to gently press additional liquid out of the cooked blueberries.


After all, if I’m making the simple syrup for a mixed drink, I want as much liquid as possible!

When you strain the berries out of the syrup, you’ll end up with about 10 ounces of liquid.


If you’re making this blueberry syrup to use as a topping, go ahead and leave the berries!


They’re really delicious, and a great source of fiber.


If you don’t strain the berries out of the syrup, you will end up with about 14 ounces of liquid.


This syrup is wonderful over French Toast!


You can even serve it over low carb pancakes or waffles and still have a keto-friendly meal.


After all, this blueberry simple syrup only has 4 net carbs per serving!

How Do You Store Homemade Simple Syrup?

If you aren’t using the syrup immediately, place it in a container with a lid and store it in the refrigerator for up to 2 weeks.

I like using glass canning jars to store the syrup because the lids are very secure.

Ingredients

  • 1 cup water
  • 1 cup fresh blueberries
  • 1/2 cup Swerve sweetener
  • 1/2 tsp lemon zest
Instructions

Place all ingredients in a small saucepan and bring to a boil over medium heat.
Reduce heat and simmer for 20 minutes.
For simple syrup, pour through a fine mesh strainer to remove the berries. Pour syrup into a covered container and refrigerate. Yield will be approximately 10 ounces.
For a blueberry topping, pour syrup and berries into a covered container and refrigerate. Yield will be approximately 14 ounces.
Syrup can be stored in the refrigerator up to 2 weeks.
Tips
  • Please note, this syrup will be thin. For a thicker syrup, either puree the liquid and berries after cooking, or sprinkle up to 1/4 tsp of glucomannan powder or xanthan gum while simmering.
