With just One Ingredient- Tomato; this recipe is quick and easy to make. No need to stand over the cooker for hours,toss it into the oven until tender and bursting with flavour.Make this homemade tomato puree, pour in sterilized jars, refrigerate or freeze it

Make ahead of time and use as a base for pizza,in sauces or as a delicious side.

Pour homemade tomato puree in a sterilized glass jar. To sterilize the jar, you can boil the jar and lid in hot boiling water for 5 minutes or rinse the jar and lid with hot water.

Here I used the tomato puree on a homemade pizza. Delicious!

Ingredients

  • 15 medium tomatoes
  • ½ cup olive oil
Instructions

Wash and half the tomatoes.
Place foil paper on baking pan and drizzle with olive oil.
Line with tomatoes skin side down.
Roast at 150°c for 40minutes
Let it cool,peel skin off skin. Pour tomatoes and all its juices into a blender and puree till smooth.
Pour into jars and store in the refrigerator or into ice trays and store in the freezer.

    I love this - I do the same thing with many of my tomatoes every summer, only when I oven-roast, I do add onion and garlic. I then process the jars, so I have lovely summer-tomato taste for pasta sauce, chili, you name it, during the months when a delicious sun-ripened tomato is nothing but a memory!!! I DO love the idea of freezing some in an ice-cube tray - I can TOTALLY see dropping a couple of cubes into soup, stew, etc., for a little underlying tomato taste! Super-smart!!! ~Chrissie
