If you are bored with the same old side dishes, you need to give this recipe a try! Roasted tomatoes with feta is the perfect side dish to spice up any meal.


It is so simple and comes together in under 30 minutes. We served it with steak, but it would be delicious served with chicken or fish. You can even toss is in your favorite pasta or top brown rice or quinoa with it for a healthy vegetarian meal.


I used leftovers for lunch by topping a slice of toast with cottage cheese and then the roasted tomatoes. The options with this simple recipe are endless!

Simply slice your cherry tomatoes in half before mixing with the olive oil and seasonings. Any variety of cherry or grape tomatoes will work in this recipe. I used red, yellow and purple variety which turned out beautifully.

Sprinkle the tomatoes with 3/4 cup of feta cheese. Once baked, the Feta cheese will form a savory crust on top of the juicy tomatoes.

Ingredients

  • 2 pints of cherry tomatoes, sliced in half
  • 3/4 cup feta cheese
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 1/2 tsp pepper
Instructions

Preheat oven to 450 degrees
Mix oregano, basil, salt and pepper together in a small bowl
In a large bowl, toss tomatoes, olive oil, garlic and seasoning together
Pour into a 9x13 baking dish
Bake for 10 minutes, top with feta cheese and bake for additional 10 minutes
