Guacamole

To say that I’m currently obsessed with guacamole would be a total understatement.


I simply cannot get enough of it! Avocados are a brilliant source of omega 3, as well as vitamins C, E, K and B6 - along with riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium! Simply put, they’re a superb super food.


Now that it’s finally (!!!) picnic weather in the UK, don’t reach for the supermarket pre-made guacamole, make your own. Or elevate your next brunch, by serving freshly poached eggs on toast with a side of guac.


After many trials I’ve landed on the perfect balance of ingredients. My recipe is not too zesty …not too spicy - it’s utterly delicious, green goodness!

Ingredients

  • 2 avocados
  • 1 tbsp red onion 
  • 2 cherry tomatoes
  • 1/2 lime
  • 1 & 1/2 tsp coriander leaves and storks 
  • 1/4 tsp dried chilli flakes
  • 1 tsp olive oil 
  • Salt & pepper
Instructions

Roughly dice the avocados (this will make it much quicker and easier to smoosh them) and really finely dice the cherry tomatoes and red onion.
Add the diced ingredients to a bowl, and blend together using a fork.
Roughly chop the coriander leaves and storks and add to the bowl, along with the juice of the lime, olive oil and chilli flakes. Give it one more good thorough mix.
Season with salt & pepper and serve.

  • In the US, coriander storks are called "cilantro.". Never toss the stalks as they are extremely flavorful and guacamole is the perfect application to use them.
