Vegan Watermelon Avocado Salad

I stumbled onto a summer salad and it was absolutely divine. I'm a huge fan of watermelon and love incorporating then into different salads. I mentioned in my previous post that I'm trying to eat more vegan foods for various reasons. I tried this feta alternative and I have to say I prefer it to the original. Trader Joe's does it again, they're just killing this vegan alternative game!
I used half of a small watermelon, the feta, one avocado and some basil leaves. I would have also added fresh mint if I had it. For a larger salad, us two avocados and the entire watermelon. I usually like to go with the watermelon minies because the regular watermelons are just too large and difficult to carry.
I diced up the watermelon and cut the avocados in half.
I also diced up some of the feta alternative cheese.
I put it all in a bowl with the basil leaves, salt, pepper, balsamic vinegar and a little Olive oil.
Then I gently mixed it to keep the avocados from becoming too much. And enjoy!

Ingredients
- 1/2 mini watermelon diced
- 1 avocado diced
- 1/4 cup feta alternative diced
- Basil leaves
- Salt and pepper to taste
- 1 tbsb balsamic vinegar
- 1 tbsb olive oil
Instructions
- Dice the watermelon, avocado and feta alternative
- Place ingredients in a bowl and season with Olive oil, basamic vinegar, salt and pepper and basil leaves
- Mix together gently as do not disturb the avocado cubes
