So, I’ve been playing around with keto over the last month or so and honestly, I’m loving it. Been super fun to find new ways to enjoy my favorites. Also discovering some new recipes that I’m just shocked I haven’t heard of before. Like…


Butter Beef


I know, sounds totally like something I’d already know right?!


I mean, I’m not a newbie to how delicious beef is with butter (see: Vic’s Tricks To…Searing the Perfect Steak). But, this was a new technique of making a kind of butter sauce to sear your meat in.


Which got me excited…


PSA: Obvi this can be made not keto by just using regular noodles. But, I’ll be using zoodles here.


PSA 2: I’m calling this a 20 min or less recipe because if you marinade ahead of time and use pre-made zoodles then it won’t take long at all.


First, you’ll want to cut up some sirloin steak into bite sized pieces. Throw em in a ziplock and add in your marinade.


I used mostly soy sauce, a little hot sauce, ginger, garlic, some lemon juice, and Guy Gone Keto teriyaki which I got in my Keto Box this month. Which I highly recommend!

Let it sit in the marinade for at least 30 minutes, then heat some oil in a large skillet. Remove the beef from the marinade using tongs, keeping the remaining marinade for later.


Vic Trick: Do not overcrowd the pan or the steak will steam, won’t get a nice sear, and will be chewy. If you have too much, just do it in batches.


Once the beef is browned, add butter and garlic and cook for a minute, coating the steak. Once coated, remove the steak from the pan and set aside.

In the same skillet, add butter, lemon juice, red pepper, beef broth, and the remaining marinade. Bring it to a simmer and let it reduce for about 2 minutes.

Add the zoodles (or noodles) and let them absorb the sauce for a minute or two.

Add back in the steak to heat it up and sit back and enjoy this amazing…ly easy and delicious dinner.

Ingredients

  • For Marinade:
  • 1/4 cup teriyaki or soy sauce
  • Hot sauce
  • 1 tbsp olive oil
  • 1/2 lemon, juiced
  • For Beef:
  • 1 1/2 lbs sirloin steak, cut into chunks
  • 4 large zucchinis, spiralized, or one package of zoodles
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1/4 cup beef broth
  • 1/2 lemon, juiced
  • 1 tsp Italian seasoning
