How to make healthy strawberry chia seed popsicles. These are perfect for breakfast pops or eat as a snack or dessert.

These pops are vegan. They use chia seeds to thicken them instead of using yogurt. I used coconut milk for the base and honey to sweeten, so they are naturally sugar free. Shhh! You can use your favorite fruit to make chia seed pops. If you use other berries or fruit, you may not need to add any additional sugar.

I like these silicone popsicle molds. I like using my own wood sticks because my kids constantly lose them!

Ingredients

  • 14 ounces coconut milk
  • 3 tablespoons chia seeds
  • 2 tablespoons raw honey or maple syrup
  • 2 cups strawberries
Instructions

In a medium sized bowl, combine the coconut milk, chia seeds, and honey or maple syrup. Stir well.
Cover and place in the fridge for 2 hours.
Slice fresh strawberries. Place a few in the popsicle mold and then spoon in the chia seed pudding mixture. Add more berries as desired.
Put the sticks in the popsicles and place in the freezer. Freeze for at least 6 hours. I let mine freeze overnight.

    This sounds good but I'm confused. Do you cook this for four hours?

    Sounds good. The four hour cook time is freezing time.
