Watermelon Caprese Salad
Use a 4-inch star-shaped cookie cutter to cut out an equal number of stars
Arrange the watermelon on a platter
Layer with cheese then arugula
Top with a final star
Drizzle each with balsamic glaze and serve.
Blueberry and Strawberry Hand Pies
Preheat oven to 350F°F.
Unroll the dough.
Use large and small star-shaped cookie cutters to cut even numbers for the hand pies.
Place the 2 cups fresh or frozen strawberries in a pot, along with the sugar, butter and water. Bring to a boil over medium heat and stir continuously, for 8 minutes.
In a separate pot, combine the blueberries, sugar, butter and water. Bring to a boil over medium heat and stir continuously, for 8 minutes.
Remove both pots from heat and allow to cool for about 10 minutes.
Spoon small amounts of the filling (the amount will depend on the size of your pies) into the center of half of the cut-outs and then sandwich a clean cut-out overtop. Leave enough space around the edges of the stars to seal.
Using a fork, seal the sides together completely.
Place hand pies on a lined baking sheet.
Bake for 8-10 minutes until slightly golden.
When cool, sprinkle with powdered sugar.
Tips
  • You can also top the watermelon salad with olive oil and salt
