Mango Lassi With Pistachios and Pomegranate
Have you found yourself craving a cool, refreshing, fruity, and fairly healthy drink...all at once? Just me? Mango Lassi is a favorite staple at many Indian restaurants and once I had it, I knew I had to recreate at home. I had no idea how simple it was to make. Don't miss the fresh grated cardamom spice--it's a must to bring out the flavor of the mango.
You can, of course, use frozen mango chunks here which will make this measurably easier. Peeling all the mangoes can be....tiresome! Mangoes are a tricky fruit, but so wonderful. Pro tip: If you can, head to a local Indian Grocery store near you and look for fresh mangoes in store. There's a good chance they are much more flavorful than what you will find in your grocery store. They are usually smaller and much sweeter.

Ingredients
Mango Lassi
- 1 1/2 C mango cubes (fresh or frozen is fine)
- 1 C plain yogurt (I like greek for a bit more thickness)
- 1/2 C cold whole milk
- 2-4 tsp sugar depending on taste
- Pinch of grated cardamom
- Pomegranate seeds, pistachios, or saffron for topping (optional)
Instructions
Mango Lassi
- Blend all items together
- I like to add a few ice cubes to thicken up and make super cold
- Serve immediately and garnish with toppings if you choose
