Here is how you can whip up these soft and chewy sugar cookies. But first, a few details on cook time.
- Prep time: 10 minutes
- Inactive time: 1 hour
- Bake time: 8 minutes
- Servings: Approximately 20 3-inch cookies
In this recipe for Lofthouse cookies, we’ve broken down the ingredients into sections. One section is for the cookies and the other is for the Lofthouse cookies frosting recipe.
Lofthouse Cookies Ingredients:
- ½ c unsalted butter, softened
- 1 c powdered sugar
- ½ c oil
- 2 eggs
- 1 t clear vanilla
- 2 T corn starch
- 1 t baking soda
- 1 t baking powder
- 1 t cream of tartar
- 3 c flour
Lofthouse Frosting Ingredients:
- ½ c shortening
- 3 c powdered sugar
- 1 t clear vanilla
- 4 T. heavy whipping cream
- ½ t salt
- Orange food coloring (or another color food coloring — optional)
- Sprinkles (optional)
To get started, you will need a large mixing bowl and a hand mixer, or a stand mixer. If you don’t have a mixer available, that’s OK, you’ll just need to combine everything extremely well mixing by hand.
In the bowl, combine the softened butter and powdered sugar. Cream together the ingredients until very smooth.
Add in the oil, eggs, cream of tartar, baking soda, baking powder, corn starch and vanilla and mix until very smooth. Be sure to crape down the sides and mix again.
Next, for this Lofthouse cookies recipe, you will want to add in the flour.
If you are using a stand mixer, you may want to consider changing the attachment from the whisk to the paddle attachment.
Mix everything together the dough comes together and balls up in the center, pulling away from the sides of the bowl.
You will then want to chill the dough for at least an hour.
When ready to bake your cookies, preheat the oven to 375 degrees.
Using two sheets of parchment, sandwich the chilled dough and roll out until about ½ of an inch thick. Do not use flour as it will dry out the dough too much.
Use a round cookie cutter or a round drinking glass to cut out your cookies.
Transfer to a parchment lined baking sheet and bake for 8 minutes.
The cookies should just be set with a slight browning on the bottom of the cookie.
Over baking will make for hard and crumbly cookies, rather than soft and slightly chewy.
Allow to cool before decorating.
When you are ready to decorate your Lofthouse cookies recipe, you will want to make the frosting.
In a mixing bowl or the bowl of a stand mixer, combine together the powdered sugar, shortening, vanilla, whipping cream and salt.
Mix the frosting well on low speed for about 2-3 minutes. Once combined, scrape down the sides and then mix again on high speed for about a minute to fluff up the frosting.
Add in your desired food coloring and mix until the desired color is achieved.
Continue to scrape down the sides when needed and mix until the color is cohesive. Cover the frosting until ready to use.
When ready to decorate your cookies, use a butter knife or flat spatula to spread a layer of frosting over the cookie.
Immediately add any desired sprinkles before the frosting hardens.
Gently press in the sprinkles if needed to help them stick into place.
- We used a mix of sprinkles that you can get from Target – but any major grocery store, hobby store or online will have festive varieties. Buy sprinkles on Amazon here.
- These cookies bake in only 8 minutes. The cookies should just be set with a slight browning on the bottom of the cookie. Over baking will make for hard and crumbly cookies, rather than soft and slightly chewy.
- Chilling the dough before baking helps to prevent the cookies from spreading too much.
- Cookies can be stored in an airtight container for up to 3 days.
