Have you tried Pesto eggs?! If not then you seriously need too!


Your eggies bake in a delicious pesto-y sauce with some delicious veggies, for the perfect toast topping!


Brunch is probably my favourite meal of the day, as it’s so versatile as to what you can make! Eggs make the perfect base for a good brunch, as the are high in protein and keep you full all afternoon. There’s so many ways you can cook eggs, and by baking them in this method they cook perfectly and the yolk stays runny!

Ingredients

  • What you’ll need…
  • (2 servings)
  • 4 eggs
  • 4 mushrooms
  • 1/4 red onion
  • 1 clove of garlic
  • 1 large tomato
  • Handful of spinach
  • 3 heaped teaspoons of green pesto
  • Feta to crumble on top
Instructions

Chop your onion into small cubes, your garlic finely, your tomatoes in half and your mushrooms in strips.
Next soften the veg in a large non stick frying pan, starting with the onions first, then after a couple minutes your garlic, then finally your mushrooms and tomatoes.
When they are soft, add your spinach and pesto and cook for a couple minutes. 
Next make 2 holes in your mix and crack your eggs inside. Place a lid on top and turn down the heat. Let the eggs bake until cooked. 
Season eggs with salt and pepper, and crumble some feta on top. Serve on your favourite toast.
