In 2020, I decided I had had enough. I was morbidly obese and in constant pain with my hips, ankles and some issues with my feet. I had to clean up my act. My dilemma? I love FOOD! All food too, I decided a long time ago that I was going to enjoy life and eat what I wanted. Little did I know at that time that it was killing me, causing pain and inflammation. I decided I had to make a change. I started looking for healthy swaps for the foods that caused inflammation. And I did it. This recipe is one of those that shows you don't have to give up and live a life of deprivation.


Eating Healthy Doesn't Have to be Boring


The way we cook things often determines a lot in the way of how good/bad it is for you. Just like our ROASTED SWEET POTATOES and our ROASTED BRUSSEL SPROUTS , this recipe uses the healthier method of roasting. Roasting vegetables replaced deep frying for me. I found out quickly that I wasn't missing anything. And the intense flavors you get by doing so is a delicious surprise.


How to Make Them


Vegetables have all kinds of wonderful, natural flavor. Like a good cut of beef, you don't need lots of fancy spices to really make a flavorful dish. Using very little here, we let the Okra shine in its own delicious flavor that roasting naturally brings out.


~ Ingredients


  • 1 to 2 pounds fresh Okra, washed and trimmed
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon of Sea Salt
  • ⅛ teaspoon of onion powder
  • ½ teaspoon black pepper
  • ⅛ teaspoon of garlic powder


~ Method ~


  1. Preheat oven to 450°. Wash and trim okra. Cut in half or quarter and toss them into a large bowl, add olive oil, salt, pepper, garlic powder and onion powder and toss. Pour on to a large sheet pan and spread in a single layer.
  2. Roast at 450° 15-20 minutes or until desired color is reached.
  3. Allow to cool a bit, serve and enjoy!
Tips and Tricks


How do I make sure they all get done at the same time?

The secret is in the prep. Making sure all of your veggies are cut about the same size insures even cooking. Also checking them at half way through cooking time is a must! Everyone has a different level of done-ness they like, checking half way will help give you a great idea on how much farther to go.

This isn't a very large amount, can I make more?

Yes, all of our recipes are easy to half, double or triple. These are great to feed a crowd and can easily be eaten quickly, double or more to insure you have plenty!

How can I make this healthy?

This recipe is quite frankly already there. You can however add additional spices to change it up. This is a good starting point. There is no end to the possibilities you can come up with. To keep it healthy, just make sure you limit the salt and double check the other things you are adding to keep from adding too much unnecessary sodium.
