Oven Roasted Carrot Fries

The other day I was looking for a side dish that I could make to serve along side some turkey burgers. I was hoping to make sweet potato fries but when I realized that I only had one left I had to think of an alternative. I had plenty of carrots that I needed to use up so I thought why not try out carrot fries?

These came out so delicious and I now almost prefer them to sweet potato fries. The problem with homemade sweet potato fries is that they sometimes come out soggy, well not the carrots! The carrot fries crisped up beautifully on the outside and were a perfect texture on the inside. My picky kids who normally don’t like carrots didn’t even notice and gobbled them up.

I made a spicy Mayo to dip them in by mixing a little bit of sriracha into the Mayo and the dish was outstanding.

This has definitely become my new favorite way to cook carrots and I can’t wait to make them again!

Begin by peeling and washing the carrots. I used four large carrots for this recipe. After you have peeled the carrots cut them into sticks. Try to make them approximately the same size so they cook evenly.

Drizzle with 2 tbsp olive oil and season with salt and pepper, or your favorite seasoning of choice. Give everything a light toss until evenly coated.

Arrange the carrot sticks on a baking sheet lined with parchment paper in a single layer.

Bake for 15 minutes, and then flip and bake for an additional 10-15 minutes.

Garnish with some fresh parsley and serve with a side of spicy Mayo.

I made the spicy Mayo by mixing a little sriracha sauce into plain mayonnaise.

These turned out so great and are a perfect alternative to traditional French fries.

Ingredients

  • 4 large carrots
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • pepper to taste
  • Parsley to garnish
Instructions

Preheat oven to 425.
Wash and peel carrots.
Cut carrots into evenly sized sticks.
In a large bowl toss the carrots with olive oil, salt and pepper.
Arrange carrots on a parchment paper lined baking sheet in a single layer.
Bake for 15 minutes, and then flip and bake for an additional 10-15 minutes.
Garnish with some fresh parsley and serve.
