Ingredients

  • 1 cup water
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp salt
  • Vegetable oil, for frying
For coating
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
Instructions

Heat about 2 inches of vegetable oil in a large pot or skillet over medium high heat. While the oil is heating, prepare the batter. If needed, reduce burner temperature to maintain heat at 350F.
In a medium sized sauce pan over medium heat, add water, granulated sugar, salt and butter. Stir slowly until combined and bring this mixture to a boil.
After the mixture reaches to a boil, lower the heat to medium-low. Pour in the all-purpose flour and stir constantly with a rubber spatula until the mixture comes together and is mostly smooth.
Transfer the mixture to a medium mixing bowl. Allow it to cool for 4-6 minutes.
Add the eggs and vanilla extract and beat with an electric mixer until it all comes together. Transfer the batter into a piping bag fitted with a medium-sized star tip.
Carefully pipe out the dough into the heated oil. Once it reaches 5-7 inches in length, cut the end with scissors. Fry for about 2 minutes and flip or until golden brown. Transfer the fried churros onto paper towels to dry before coating them in a sugar cinnamon mixture.
Repeat this process with the remaining dough. Serve plain or with any desire dipping sauce.
