I am a big fan of baking cookies. The recipes are often simple without the need of exhaustive list of ingredients or time for baking. I have made my point, cookies are really simple to make! My daughter love gooey soft cookies, those are her favorite kind. I simply love the freshness & aroma of homemade cookies and sometimes make them in between work.

They cookes are crispy, full of wonderful oat bite and honey flavor. These cookies are Sweet, chewy inside, crisp on the outside, delightful and addictive. These are so delicate and addicting, it’s hard not to eat just one because they just melt in your mouth. Honey and Oatmeal cookies sweetened with honey are healthy treat to satisfy hunger.

I have shared some favorite cookie recipes in the past – Oats Coconut cookies, Millets Cookies, Jam Cookies, Masala Cookies Cashew Cookies, Almond Cookies and so on. Today I have decided to share another healthy eggless cookie recipe that my personal go to recipe, it's Honey and Oats Cookies. They are free from refined sugar & are nutritional bites of goodness which couldn’t get better. These real honey and oats cookies cast a magical spell on your palate.

Ingredients

  • 1 Cup Rolled Oats
  • 4 tbsp Whole-Wheat flour
  • 4 tbsp Coconut oil or butter
  • 4 tbsp Honey
  • 1/4 tsp Baking powder
  • 2 to 3 drops Vanilla Essence
  • 1/4 Cinnamon Powder 
  • 3 to 4 tsp Milk 
  • Salt a pinch
Instructions

Preheat oven at 180 degrees Celsius for 10 minutes.
Mix honey, milk, melted coconut oil, and vanilla essence in a bowl and whisk everything nicely.
Add whole wheat flour, rolled oats, cinnamon powder, baking powder, and salt in another bowl and mix everything well.
Mix the wet ingredients to the dry ingredients and let the mixture sit for 5 minutes. 
Line a microwave-safe tray with baking paper.
Take a small amount of mixture in your hands and flatten them slightly to round shape & place them on the tray.
Bake these cookies for 17-18 minutes at 180 degrees Celsius.
Allow the cookies to cool for 10-15 minutes without lifting them. 
Eggless Honey and Oats cookies are ready. Enjoy them with a glass of milk!
Tips
  • Make sure to measure your flour correctly or your cookies will be dry and crumbly.
  • Use Butter at room temperature instead of coconut oil.
  • Don’t make the cookies too thin, otherwise, they would break easily.
  • You might have to bake for a different time based on your microwave type.
  • These cookies can be stored in an airtight container for about a week at room temperature.
