Paleo Double Chocolate Mummy Cookies

Halloween is approaching! I don't know how I am celebrating yet this year, to be honest and I'm a little bummed. This year is the first year my husband and I actually had costumes ordered and ready ahead of time, for us and the pup, but I just don't think we will end up doing anything to celebrate.


To deal with my disappointment, I decided to bake some spooky paleo double chocolate mummy cookies so I could stage a spooky Halloween photoshoot just for fun. That's something I don't do enough, cook/bake just for fun or stage a photoshoot just for fun. I'm always chasing the next recipe I think you guys will LOVE and sometimes forget to have fun in the meantime. But, guess what? This paleo dessert was not only so much fun to create, I know you're going to have so much fun making it at home! Whether you have little ones who need cheering up because trick or treating is cancelled, or you just need some cheering up yourself, you'll love every single bite of these delicious paleo double chocolate mummy cookies! They honestly are one of my favorite paleo desserts of all time. I've basically just dressed up my Paleo Double Chocolate Sea Salt Olive Oil Cookies for Halloween and I could not have made a better choice! I almost forgot how delicious these paleo double chocolate cookies were. They're like the perfect combination of a brownie and a cookie; a paleo brookie if you will and these paleo double chocolate cookies are definitely a treat, no tricks here!

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup olive oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 large eggs
  • 1/2 cup cocoa or cacao powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 cup dark chocolate chips/chunks
  • sea salt for garnish
For the Decorations
  • Edible candy eyes
  • Frosting
Instructions

Preheat oven to 350F and line 2 baking sheets with parchment paper.
Beat olive oil, maple syrup, vanilla, and eggs in a stand mixer or with a hand mixer/whisk until combined.
Combine almond flour, coconut flour, cocoa powder, salt, baking soda and baking powder in a medium bowl.
Add dry ingredients to wet slowly, mixing on low speed until fully incorporated.
With a silicone spatula, fold in chocolate chips.
Using a spoon, scoop out cookies and place on parchment lined baking sheet.
Garnish with additional chocolate chunks and sea salt.
Bake for 10-12 minutes. Cookies will feel soft and slightly brownie-like.
Fill a piping bag with frosting + secure a flat icing tip.
To create little bug-eyed monsters, simply pipe frosting onto the back of the edible candy eyes and place 3-5 around the top of the cookie. Press gently to secure.
For the mummies, first place two candy eyes about 1/3 of the way down the cookie and secure in the same way you did for the bug-eyed monster cookies.
Next, pipe "gauze" onto the cookie. You'll make a crooked "X" on the top of the cookie, then begin layering the "gauze" in criss cross motions along the "body". See images above for a close up on how I created the mummy cookie.
