Cookie Dough Cups

As you can probably tell from my past recipes... I LOVE cookie dough!! And I'm sure I'm not alone on this. If you're like me and have a cookie dough obsession, this is the recipe for you!


These cups take less than 10 minutes to make, and require no time in the oven! These cookie dough cups also don't contain any refined sugars, so you don't have to worry about experiencing any sugar crashes!

Ingredients
Cookie Dough Layer
  • 1/2 cup of vanilla protein powder
  • 1/4 cup of oat flour
  • 2 tbsp of coconut oil
  • 1 tsp of vanilla extract
  • 1/4 cup of maple syrup
  • 1/4 cup of peanut butter
  • 1/3 cup of chocolate chips
Chocolate Layer
  • 1/3 cup of chocolate chips
  • 2 tbsp of coconut oil
Instructions

Pour all ingredients for the dough layer into a bowl and mix until combined.
Take around 1.5 tbsp sections of the dough and press it into the bottom of a cupcake liner.
Melt your chocolate + coconut oil mixture for the top layer.
Take a small spoonful of the melted chocolate and pour a thin layer on top of the dough layer.
Place in the freezer for 3-5 minutes, until the chocolate layer in solid.
Remove from the freezer, unwrap each cup & enjoy!!
Tips
  • Store in the fridge or freezer to keep the chocolate layer from melting.
  • Silicone cupcake liners work the best for this recipe, since the dough is quite sticky and tends to stick onto the paper liners.
