Ingredients

  • 2 1/4 Cups Almond Flour 
  • 1/4 Cup + 2 Tablespoons of Organic Light Brown Sugar (Substitute for Monk Fruit Sweetener if making Keto) 
  • 1 Tablespoon of Apple Cider Vinegar 
  • 2 Teaspoon Pure Vanilla Extract 
  • 1/2 Cup of Melted Coconut Oil (You can substitute butter. Use vegan butter if you’re making the cookies vegan)
  • 1/2 Teaspoon of Salt 
  • 2 Teaspoon of Baking Powder
  • 1/4 Cup Chocolate Chips (If making Keto, use sugar- free chocolate chips cookies. If you’re making vegan, use dairy free chocolate chips)
Instructions

Preheat oven to 350 degrees F. 
Line a baking sheet with parchment paper. 
Add all of the ingredients to a bowl and mix until a dough forms.
Scoop 1" balls of dough onto the prepared baking sheet. Arrange the balls of dough about 1 1/2" to 2" apart. Flatten the dough into cookies using a flat surface (I use a water glass) 
Bake the cookies for 12- 15 minutes or until the edges begin to turn golden brown. 
Allow the cookies to cool for at least 10 mins before attempting to pick them up. They will be too soft, and they will break.

    Great recipe I made a 1/2 recipe and got 17 cookies. I added chopped pecans. I used a ratio of 2/3 almond flour and 1/3 1:1 gluten free flour. I also added 25% more sugar. Great texture. Great flavor
