It seems I have an overabundance of very ripe bananas in my fruit bowl!
Now that is a great excuse to make brownie don't ya think?
Chocolate Chip & Banana Brownie to be precise!
Serve warmed or cold.
With or without cream.
Too make it extra special add some custard.
It's a very nice lunchbox treat too!
You'll find the recipe HERE.
To make the stencil for the icing sugar I printed a butterfly template from the net and cut it out.
Place on each brownie segment, sieve icing sugar over the top, and carefully remove the stencil.
(My gorgeous daughter came up with this idea and it really works!)

Recipe details
Ingredients
- 125 grams butter
- 1/4 cup dark cocoa powder
- 1 teaspoon vanilla essence
- 1 cup white sugar
- 2 eggs
- 2 mashed bananas
- 1/2 cup plain flour plus 2 extra tablespoons
- 1/2 teaspoon baking powder
- 1 cup of chocolate chips
To Make:
- In a large saucepan melt:
- 125 grams butter.
- Add:
- 1/4 cup dark cocoa powder
- 1 teaspoon vanilla essence
- 1 cup sugar.
- Stir over low heat until the sugar has dissolved.
- Add:
- 2 large eggs, beating quickly to combine.
- Add:
- 2 mashed bananas, 1/2 cup plain flour plus 2 extra tablespoons, 1/2 teaspoon baking powder.
- Mix and then add 1 cup of chocolate chips.
- Pour into a lined slice pan and bake at 180 celsius for 30 minutes.
- Leave to cool and then dust with icing sugar.
