Raw Vegan Nanaimo Bars

If you’re not from Canada, there’s a chance that you may not have heard of this delicious treat that was named after the city in which it originated from! This three-layered bar is full of coconut and chocolate flavours, but one square can normally feel pretty heavy. So, I decided to recreate this treat in a healthy way that will leave you feeling just fine after eating a couple of squares! With raw, vegan and natural ingredients, you will be left with sustainable energy for the rest of the day! This recipe makes a small batch of squares, however, feel free to double up the recipe and make it into bars instead to substitute your regular granola bar.

Recipe details
Ingredients
Layer 1
- 3 tbsp almond flour
- 2 tbsp unsweetened coconut shreds
- 1 tsp vanilla extract
- 1 1/2 tsp maple syrup (can adjust to your desired sweetness level)
- 1/4 tsp cocoa powder
Layer 2
- 3 tbsp almond flour
- 1 tsp vanilla extract
- 1 tsp maple syrup
Layer 3
- 2 tbsp chocolate chips
- 2 tbsp coconut oil
Instructions
Layer 1
- Mix all ingredients in a bowl and flatten out onto a parchment paper placed in a small square or rectangular pan or container. Freeze for 10 minutes.
Layer 2
- Mix ingredients in a bowl and flatten on top of layer 1. Freeze for another 15 minutes.
Layer 3
- Melt ingredients together for 30 seconds and mix well. Pour on top of layer 2 and freeze for 20 minutes.
Tips
- *To store, keep in the freezer.
