These No-Bake Butterscotch Bars have been a family favorite ever since I can remember! My mom used to make them around Easter time, and we’d gobble them up before she even had them cut!
It’s a little early for Easter treats, but spring is right around the corner, and like I said, I’m a wee bit impatient!
I love them not just for how scrumptious they are, but also how fun. Their signature-bright confetti colors always make me smile and remind me of spring!
And the way the weather has been lately, I really need all the reminders of spring I can get!
No Bake Butterscotch Bars
Recipe details
Ingredients
- 1 12 oz package butterscotch chips
- 1 cup creamy peanut butter
- 1/2 cup butter
- 1 10 oz package mini colored marshmallows
- 1 teaspoon vanilla
- 1/2 cup coconut
Instructions
- Place marshmallows in the refrigerator or freezer to chill. (At least 30 minutes) Put a piece of parchment paper in the bottom of an 8x8 or 9x13 pan leaving ends out to remove. (the size of the pan will determine how thick your bars are and how many) Combine the butterscotch chips, peanut butter, and butter in a large saucepan. Cook over low heat (stirring constantly) until the mixture is melted and smooth. Remove from the heat and allow to cool slightly. Add in coconut and vanilla. Stir until combined. Fold in the marshmallows. Pour into the baking pan spreading evenly with a spatula. Refrigerate for 1 hour. Remove the bars from the pan (lift parchment paper) and cut. Keep refrigerated or freeze.
