Amazing soft baked Lucky Charms Protein Bars with cereal flavored protein powder, almond butter, and actual cereal. These healthy lucky charms treats are gluten free, low fat and low sugar too!

I was not sure what the hype with lucky charms cereal treats were, but I’m so glad I gave these a go!

Proper lucky charms cereal flavored bars with so much protein and low sugar. Actually healthy snack bars here.


Ingredients for Healthy Lucky Charms Protein Bars Recipe:

These lucky charms protein bars are made with simple healthy ingredients, have no sugar or milk, making them the perfect homemade gluten free, dairy free and sugar free protein bar!

Base for Homemade Lucky Charms Bars

  • Lucky Charms Cereal
  • Marshmallow Cereal Protein Powder – key for the high protein lucky charms bars.
  • I used Marshmallow Cereal protein powder here from HTLT Supps.
  • Oat Flour – You can make your own by blending rolled oats in a high speed blender
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein recipe. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
  • Coconut Flour
  • Almond Milk
  • Get Lucky Almond Butter from American Dream! This is American Dream Nut Butter’s St. Patricks Day flavor: Get Lucky Almond Butter.

The Protein Shake Milk and Cereal

  • Marshmallow Cereal Protein Powder for high protein marshmallow cereal bar, and also replace the sweetener.
  • I used HTLT Supps for this recipe.
  • Almond Milk
  • Lucky Charms Cereal

And for the Chocolate Topping:

  • White Chocolate Chips or Chopped Chocolate. I would recommend Lily’s to keep it sugar free.
  • Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.

Ingredients
Base:
  • 1/3 cup Lucky Charms Cereal, 12g
  • 1/3 cup Oat Flour, 30g
  • 1/2 scoop Marshmallow Cereal Protein Powder, Whey-Caesin recommended below, 15g
  • 2 Tbsp Unflavored Protein Powder, Whey-Caesin, 11g, see post for subs
  • 2 Tbsp Coconut Flour, 14g
  • 1/4 cup Unsweetened Almond Milk, 60ml
  • 1 Tbsp (Lucky Charms flavored) Almond Butter, 14g, see post for rec/subs
Protein Milk + Cereal:
  • 2/3 cup Marshmallow Cereal Protein Powder, Whey-Caesin recommended below, 60g
  • 1/4 cup Unsweetened Almond Milk, 60ml
  • 1 1/3 cup Lucky Charms Cereal, 48g
Topping:
  • 1/2 Tbsp White Chocolate Chips, Sugar-free recommended, 7g
  • 1/8 tsp Coconut Oil
Instructions

Line a 8 x 4” loaf pan with parchment paper; leave an overhang to lift out later.
Preheat oven to 350°F.
Base:
Use food processor to crush lucky charms cereal(or beat down in zipper bag).
In a bowl, combine crushed cereal, oat flour, unflavored protein powder, vanilla protein powder and coconut flour.
Add in almond butter and milk (little at a time) and mix. Mixture will be like a dough.
Transfer to prepared pan and press down.
Protein Milk + Cereal:
In the same bowl, whisk marshmallow cereal protein powder and almond milk (adding little at a time) to form thick, spreadable paste.
Spread ⅔ mixture on base and use back of spoon/spatula to smoothen.
Topping:
Spread lucky charms cereal evenly over protein shake, and press down.
Use small spatula or back of spoon to spread remaining protein shake mix on top.
Bake/Cool/Slice:
Bake for 15 minutes until slightly hardened; Protein shake should be a bit puffy.
Allow to cool completely, about 30 minutes.
Lift layers out of pan, place on cutting board and using a sharp knife, slice into 8 bars.
Place chocolate chips and coconut oil in a microwave safe bowl and microwave about 30 seconds, stirring halfway, until completely melted.
Let cool a few minutes, then drizzle on bars.
