A treat for tahini lovers!


A quick and easy healthy snack idea.

I'm all for easy recipes I can whip up in a couple of minutes and have on hand for the week. These are so perfect for that! Made with healthy, delicious ingredients, all dairy-free and can easily be made vegan.


You will need:

Almond flour and all-purpose flour.

Coconut oil or butter and maple syrup or honey.

Tahini and chocolate chips.

Finally, you will need dark chocolate or any other chocolate you may prefer to top it with.


You will need:

  • Bowl to mix
  • Bowl to melt the chocolate
  • Spatula
  • Baking tray lined with parchment paper

For measuring: 1 tsp, 1 tbs, 1/3 cup, 1/4 cup, 1/2 cup, 1 cup.

Ingredients
Shortbread Layer
  • 1/2 cup almond flour
  • 1-1/2 cup all-purpose flour
  • 1/2 cup melted coconut oil You might want to add another tablespoon if the mixture is too dry.
  • 1 tablespoon maple syrup Or honey.
Tahini Layer
  • 1/2 cup tahini
  • 1/3 cup honey Or maple syrup.
  • 1/3 cup melted coconut oil
  • 1/4 cup chocolate chips
  • 1/2 teaspoon vanilla
  • 1 tablespoon HAPPY WAY - triple chocolate fudge protein powder Optional.
Top Layer
  • 8.8 oz melted dark chocolate 250g.
  • 1 tablespoon melted coconut oil
Instructions

Preheat oven to 350°F/180°C and line the baking tray with parchment paper.
In a bowl, mix the flours together.
Mix in the coconut oil and maple syrup.
Combine together until the mixture forms a dough.
Press the dough into the tray.
Bake for 20 minutes.
Once the layer has chilled, make the tahini mixture.
Combine the tahini, honey, coconut oil, vanilla and protein powder (if using) together.
Mix in the chocolate chips.
Spread on top of the first layer.
Finally add the melted dark chocolate on top and refrigerate for at least 30 minutes.
Cut into slices and enjoy!

    What size baking pan please? Thx!

      The recipe said "baking tray" which to me - means a "cookie sheet or baking pan" which translates to a 10 x 15 or so; yet, I suppose you could also make them in an 8 x 8 or 9 x 13 baking dish...
