"Z" Apple Pie

Ah Yes, The Monster Zucchini! We all have one that hides from us don't we?
But that's just fine with me because I have the Best Recipe for those big boys AND IT IS YUMMY!!!
Peel and slice through the middle of the squash length wise. Remove seeds with a spoon. Slice to resemble apple slices. Cook slices in water until just tender. Drain and place in cold water for 5 minutes. Drain thoroughly.
Mix all ingredients well and place into a 9 inch unbaked pie shell. Dot with butter.
Top with top crust, vent. Bake at 400* for 30 minutes or until golden brown.
The first time I made this I didn't tell my family it was Zucchini, they totally thought it was real Apple Pie!

Ingredients
- Zucchini, 6 cups ~ peeled, seeded, sliced
- Sugar, 2 1/4 cups
- Cinnamon, 1 1/2 teaspoons
- Cream of Tarter, 1 1/2 teaspoons
- Lemon Juice, 1 1/2 teaspoons
- Nutmeg, 1/4 teaspoon
- Salt, dash
- Butter, 2 Tablespoons ~ cut in small pieces
- Pie Crust ~ top and bottom, unbaked
Tips
- You can substitute Margarine for the Butter

Oh! You are just mean!!! Haha!! Love the sneakiness of this. Sounds like a brilliant way to eat more veggies.
I have made this (or a very similar) recipe several times and, like you, I didn’t tell my husband it was zucchini which he often says he “hates.” After he consumed his second slice I broke the news he was eating zucchini. He didn’t believe me! Recalling this recipe has made me think it might be great for T-Day dinner.
