Growing up there was one thing you could always count on. My mom was always baking something yummy! Especially on the weekends when she had a bit more time. She calls this pie French Apple Pie, and some folks call it Crumb Pie, but I just called it delicious. Years later, when I became a mom, my mom passed the recipe down to me. And years later, I in turn passed it down to my daughter. Over the years we've made minor changes to the crust, but the filling and sweet buttery crumble have always remained exactly how mom used to make them!

Ingredients
For the Crust
  • 1/2 cup ice-cold shortening
  • 1/2 cup frozen butter(salted)
  • 1 1/2 cups all-purpose flour
  • 5 Tablespoons ice-cold water
For the Filling
  • 6-8 medium apples (peeled, cored and sliced)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup white sugar
Crumb Topping
  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
Instructions
To make the crust
Cut shortening, butter, and flour together with a pastry cutter in a large mixing bowl until the texture resembles coarse cornmeal. Do not overmix. Add in cold water. Mix until the dough begins to come together.
Pour onto a sheet of parchment paper or wax paper. Flatten down with hand. Place another piece of parchment or wax paper over the dough. Roll out to about 1/8" thick circle.
Spray a 9" pie pan with non-stick spray.
Remove the top piece of parchment paper from the dough. Carefully pick up the dough on the parchment paper and place upside down (dough down) in the pie pan. Gently pull the dough away from the parchment and allow it to fall into the pan. Press the dough into place. Cut excess off outside edge. Then prick with a fork.
Place the pie crust in the refrigerator for 30 minutes.
Meanwhile, combine apples, sugar, and spices in a large mixing bowl. Set aside.
Combine butter, sugar, flour, and spices in another mixing bowl using a pastry cutter until butter is peas sized and the mixture is the texture of crumbs.
Preheat oven to 400.
Remove the pie crust from the refrigerator.
Pour the pie filling into the crust. Sprinkle with the crumb topping.
Bake for 10 minutes. Then turn the oven temperature down to 350 and bake for 55-60 minutes or until apples are tender and topping is golden brown.
Tips
  • Keep the pie crust chilled until ready to use. This will make the crust SUPER flaky!

    My mom had a recipe for a apple pie with a very similar topping that we bake In a paper bag which is supposed to keep it moist and then you rip it open at the end to brown the topping. My very favorite apple dessert 😋😋😋
