Before you move on to the next recipe you cottage cheese haters, hear me out please! You need to give this recipe a try . This meal is so much more than your average bowl of plain cottage cheese, the combination of flavors and textures are wonderful.


Toasted sourdough bread topped with cottage cheese, slices of figs, a little chopped basil, chopped pistachios, manuka honey and flaky sea salt is my new favorite snack. It’s very simple, healthy, protein fueled, filling, and it’s also a great option for an easy snack to make in a pinch.


This recipe, if you call it that is so easy and simple to make and doesn’t require any cooking. I mean it literally takes minutes to put together, it’s a no brainier and hardly requires a blog post but here it is anyway because I think it’s worth sharing and I also think you need to make it ASAP!


I highly recommend using a great quality honey. I used manuka honey which has a distinctive, rich flavor that is unlike any other type of honey. Feel free to use your favorite honey.


I used chopped pistachios because we love them but you can use any type of nut you want. I also used honey but agave or maple syrup would work also. I recommend though that you really get that sourdough extra toasty and crispy so it doesn’t get soggy with the rest of the ingredients. If you make this, I hope you enjoy it as much as I do. Ingredients
For the fig toast
  • 1 slice sourdough toast, extra crispy
  • 170g Good Culture cottage cheese (or your fav brand)
  • 2 - 3 fresh figs, sliced
  • Chopped fresh basil
  • 1 tbsp chopped pistachios
  • Manuka Honey to taste
  • Flakey sea salt to taste
Instructions
For the fig toast
Toast the bread, extra crispy.
Top with cottage cheese, spreading evenly.
Add sliced figs.
Sprinkle chopped basil.
Add chopped pistachios.
Drizzle honey.
Sprinkle with flakey sea salt.
