Easy Appetizer Recipe | Feta, Pepper & Spinach Cups

This easy appetizer recipe would work great as hor’dourves for Easter dinner, Mother’s Day brunch, or as a 4th of July snack!

- 1can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
- 1 box frozen spinach, thawed
- One small jar of marinated artichoke hearts (cut in halves or quarters)
- One jar of roasted red peppers, cut into 1 inch long strips
- Feta cheese, crumbled
- Mini Muffin baking pan
- Cooking spray
- Preheat oven to 375Fº. Spray 24 mini muffin cups with cooking spray.
- Unroll dough into 1 large rectangle. After you have a smooth, 12×8-inch rectangle, using pizza cutter, cut dough into 6 rows by 4 rows, to make 24 squares of dough.
3. Gently press the dough squares into the mini muffin cups.
4. Add cut artichokes and a bit of spinach.
5. Then add a strip of roasted red pepper and a sprinkle or small chunk of feta cheese (a potent savory cheese,) to each cup.
6. Bake 11 to 13 minutes at 375 degrees or until the dough is deep golden brown. Then your little bites will be done and ready to eat after they cool for a bit. These are the perfect way to whet the pallet before the main dish is served! They are the perfect appetizer to easily serve much flavor with just 4 easy ingredients!
These easy appetizers would go amazingly well with a cheese board or hot dips. For your next party, you should add these as one of your quick appetizers that you wouldn’t leave off of the list. - Unroll dough into 1 large rectangle. We need to get rid of the perforations, so you need to press and seal them as we won’t be using them for pre-sizing the dough. After you have a smooth, 12×8-inch rectangle, using pizza cutter, cut dough into 6 rows by 4 rows, to make 24 squares of dough.
- Gently press squares into mini muffin cups.
- Add artichokes, 1 heaping teaspoon spinach, a couple strips of pepper and a sprinkle of feta cheese to each cup.
- Bake 11 to 13 minutes or until dough is deep golden brown.
