"Pinky-licious" Almond Pancakes

One of our family's favorite weekend recipes is this pinky-licious almond pancakes. They are fluffy, tasty, sweet and delicious. The subtle pink color, comes naturally from the pink dragon fruit puree. A great way to add color and boost of fruit into your pancakes.


I like to double the recipe sometimes to have some leftover for quick on the go breakfasts during the week.


Just mix all the ingredients in a blender and cook them in a hot non-stick skillet or griddle. You may skip the blender and just whisk all ingredients in a large bowl.

Simply stack them up, garnish with your favorite fruits and a good drizzle of honey or maple syrup. The perfect brunch dish to enjoy all weekend long.

The pancake batter is a simply healthy combination of almond flour, almond milk, vanilla extract, eggs, baking powder, pinch of salt and maple syrup.

This is a delicious stack of pancakes with summer fruits.

Ingredients

  • 1 cup of almond flour
  • 2 eggs
  • 1/4 cup of almond milk
  • 1 tsp of vanilla extract
  • 1 Tbsp of maple syrup
  • 1 Tbsp of dragon fruit puree
  • 1.4 tsp of baking powder
  • pinch of salt
  • butter or coconut oil for the griddle
  • Fruit of choice for garnish (strawberries, blueberries and kiwi)
Instructions

In a blender add the almond flour, salt, eggs, baking powder, almond milk, maple syrup, vanilla extract, and dragon fruit puree. Blend for about 2-3 minutes or until all ingredients are combined.
In a hot griddle add a drizzle of coconut oil and turn temperature to medium.
Then, using a measuring 1/4 cup, pour the batter into the griddle and don't flip them until you start seen some little holes in the pancake. About 2-3 minutes, then flip over and cook for another 2-3 minutes.
Stack the pancakes, add your favorite summer fruits and a good drizzle of maple syrup or honey.
