An exclusive healthy pancakes recipe bringing together flavors of the holidays: apple pancakes with the antioxidant benefit of cinnamon, and a sweet touch of Canadian maple syrup.


Those are healthy pancakes using oat flour (can use any type of flour). Combined with apple chunks and cashews, the pancake mix creates a unique consistency and texture.


They are thick, fluffy, and moist on the inside... This pancakes golden stack is topped with more apples and cinnamon to be enjoyed any time of the year, especially around fall or the holidays.


Recommended to be served with a cup of milk... Enjoy :)

Ingredients
For the pancake mix
  • - 1 cup oats
  • - 1/2 cup flour
  • - 2 tbsp baking powder
  • - 2 tsp cinnamon
  • - 1 egg
  • - 1 cup milk
  • - 1 medium apple diced
  • - 2 tbsp coconut oil or butter for cooking
For the toppings
  • - 1 medium apple diced
  • - 1/4 cup cashews
  • - 1 tsp cinnamon
  • - 1 tbsp coconut oil or butter
  • - maple syrup (unlimited) to drizzle on top
Instructions

- Blend all pancake mix ingredients (minus the butter).
 - Heat the butter on medium heat and cook pancakes for 2 min on the first side then 1 min on the other side / until golden. Each pancake is about 1/4 cup of the mix. 
- Prepare the apple topping mix by heating up the butter in another pan, toasting the cashews, then adding the apples and cinnamon. Toss everything until the apples and cashews get golden then reduce heat and cover until the apples soften.
- Stack your pancakes, top with the apple cashew mixture and drizzle with apple syrup.
