Apple Stuffed Pancake Donuts

It's apple spice time and what better way to mix apples with then with pancakes! My kids basically eat pancakes everyday for breakfast. So it's always good to add a little bit of variety in there.

I think it's best to use apples that are starting to become overly ripe. I personally like my apples to be really hard and crunchy. So this is a good way to use those mushy apples and prevent food waste.

I started by coring and peeling two apples.


I then sliced them into thin slices. Next time, I will also cook the apple slices on either side for a few minutes to get them softened. And then pat them dry with a paper towel.

I then made the batter for the pancakes using my sour dough discard as usual.

Throw the apples in the batter and drench each side.

Then place them into a greased pan and bake them on either either side.

They come out looking like regular pancakes with a yummy inside!


If you do it right, they will have a circle in the middle and look like little doughnuts but healthier. A good addition to my pancake platter.

Ingredients

  • 2 apples
  • 1 cup warm milk
  • 1/2 cup sourdough discard
  • 1 egg
  • 1 cup flour
  • 2 tbsp sugar
  • 1 tbsp olive oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
Instructions

core and peel apples
slice thinly
cook in pan lightly and pat dry on either side
mix all ingredients in a bowel and whisk
dip apples in pancake mix
cook in greased pan on either side
