Loving autumnal mornings and the flavours that come along with it. There is something so cosy about the shift from summer foods to autumnal foods here in the UK. This recipe is great to make use of the seasonal apples on offer in the shops at the moment, and feels like a bit of a treat. I use a small amount of coconut flour in this recipe since it provides quite a lovely texture and taste, but feel free to omit it entirely and just use plain flour. I hope you enjoy this recipe and it helps warm up one of your mornings too!

Ingredients

  • 1 LargeApple
  • 80g (2/3 CUP) Plain Flour
  • 20g (1/4 CUP) Coconut Flour
  • 75ml (1/3 CUP) Milk
  • 2 Eggs
  • 1/2 tsp Cinnamon
  • Greek Yoghurt
  • Honey
Instructions

Grate half an apple, and chop the other half into small cubes.
Place the grated apple with the flours, half the cinnamon, eggs and milk into a bowl and mix together well.
Put a large non-stick frying pan on a medium heat and add a small piece of butter to coat the pan. Spoon out the batter into around 6 small even pancakes. (you may need to do this in two batches). When they are bubbling on top (1-2 minutes), you can flip them over and cook the over side.
Meanwhile, place the cubed apple and cinnamon in a small microwavable bowl and heat for a minute until softened.
Plate up the pancakes into two stacks, and top with greek yoghurt, the apple-cinnamon mixture and a drizzle of honey.
