Fluffy American Style Pancakes

First of all I should explain that this recipe is called 'American Style' pancakes as this is how they would be described in the UK. In England, our pancakes are traditionally much thinner and denser than this, but the fancy brunch restaurants would serve them thick and fluffy like this and call them American style. Secondly, if you ever needed an easy pancake recipe, this is the one for you. To help explain just how easy this is to make, I actually cooked this and took these photos on the morning I went into labour with my son just a few weeks ago. I really had a craving for pancakes so powered through those contractions in order to make a healthy, filling breakfast! It really takes no time at all and is super versatile as you can play around with the toppings as much as you like!

The pancakes are thick and fluffy making them stack on top of each other perfectly.

The pancakes should be gently cooked until very small bubbles begin to appear on one side before they are flipped.

Ingredients

  • 150g self raising flour
  • 1/2 tsp baking powder
  • 1/2 tbsp caster sugar
  • 1 medium egg
  • 1/2 tbsp maple syrup, plus extra to serve
  • 150ml milk
  • 30g unsalted butter
  • Fresh fruit, if desired, as a topping
Instructions

Put all of the dry ingredients (flour, sugar, baking powder) in a large mixing bowl and combine.
Create a small well in the centre of the flour mixture and crack the egg into the well.
Using a fork, gradually whisk the flour into the egg until combined and it comes to a thick, sticky consistency.
Slowly add the maple syrup and milk to the mixture while continuing to whisk.
Heat a frying pan over a medium heat and add 1/3 of the butter, allowing it to melt.
Spoon 1/3 of the pancake batter into the centre of the pan and allow it to spread out into a circular shape.
Leave the pancake to cook on one side over a medium-low heat until small bubbles start to form on the top. Then take a spatula and flip the pancake over, cooking for a similar amount of time, around 2 minutes on each side.
Remove the pancake and keep warm while you repeat the above steps another 2 times until you have 3 large fluffy pancakes.
Top with your desired toppings. I like to use fresh fruit and maple syrup.
