Easy Blueberry Pancakes

Frozen fruit to the rescue! I was looking to change up my go-to pancake recipe, and I was searching my fridge and pantry to see what ingredients I could throw in. I looked in the freezer and saw a large bag of frozen blueberries. That was it! Blueberry pancakes are always a fan favorite. So easy to make, and only take the tiniest bit of prep -- tossing them in flour to ensure that they don't streak too much in the batter.
I love making these fluffy pancakes for my family to enjoy. They always turn out free and people are always surprised to find out they don't contain actual milk!
Easy Blueberry Pancakes

Ingredients
- - 3/4 cup oat milk
- - 2 tbsp apple cider vinegar
- - 1 cup all purpose flour
- - 2 tbsp sugar
- - 1/2 tsp baking soda
- - 1 tsp baking powder
- - 1/2 tsp salt
- - 1 egg
- - 1 tsp vanilla
- - 2 tbsp melted butter
- - 1/3 cup blueberries
- - more butter for the pan
Instructions
- Mix the oat milk and ACV in a bowl.
- Whisk the dry ingredients together in a separate bowl.
- Add in the egg, the oat milk + ACV, vanilla, and melted butter. Toss the blueberries in 2 tbsp of flour and gently mix in.
- Heat some butter in a pan over medium heat.
- Pour about 1/3 cup of batter and flip when you see little bubbles on top and the edges start to firm up.
