Easy Blueberry Pancakes

Frozen fruit to the rescue! I was looking to change up my go-to pancake recipe, and I was searching my fridge and pantry to see what ingredients I could throw in. I looked in the freezer and saw a large bag of frozen blueberries. That was it! Blueberry pancakes are always a fan favorite. So easy to make, and only take the tiniest bit of prep -- tossing them in flour to ensure that they don't streak too much in the batter.


I love making these fluffy pancakes for my family to enjoy. They always turn out free and people are always surprised to find out they don't contain actual milk!

Ingredients

  • - 3/4 cup oat milk
  • - 2 tbsp apple cider vinegar
  • - 1 cup all purpose flour
  • - 2 tbsp sugar
  • - 1/2 tsp baking soda
  • - 1 tsp baking powder
  • - 1/2 tsp salt
  • - 1 egg
  • - 1 tsp vanilla
  • - 2 tbsp melted butter
  • - 1/3 cup blueberries
  • - more butter for the pan
Instructions

Mix the oat milk and ACV in a bowl.
Whisk the dry ingredients together in a separate bowl.
Add in the egg, the oat milk + ACV, vanilla, and melted butter. Toss the blueberries in 2 tbsp of flour and gently mix in.
Heat some butter in a pan over medium heat.
Pour about 1/3 cup of batter and flip when you see little bubbles on top and the edges start to firm up.
