Blueberry Lemon Pancakes

Blueberry, lemon, banana, oat, and coconut pancakes! A lot of adjectives but an abundance of Spring flavors. These are quick to make, taste delicious, and are kid friendly as well. My 9 month old baby loves these although I do recommend speaking to your pediatrician before introducing solid foods like this to your little ones.


A simple recipe for healthy pancakes is banana, oats, and an egg. Adding more fruits/vegetables to this mix just adds more nutrients and flavors to the original recipe. Feel free to experiment with that foundation with some creative flavor combinations!

Ingredients
Blueberry Lemon Pancakes
  • 2 mashed bananas
  • 1 egg
  • 2 tbsp coconut flour
  • 2 tbsp oat flour
  • 1 tbsp cinnamon
  • 1 tbsp maple syrup
  • t tbsp coconut yogurt
  • 2 tbsp milk
  • Lemon juice from half a lemon
  • Lemon zest from half a lemon
  • 1/2 cup blueberries
Instructions
Lemon Blueberry Pancakes
In a medium mixing bowl mix wet ingredients (2 mashed bananas, egg, maple syrup, milk, coconut yogurt, lemon juice)
Add in dry ingredients (2 tbsp coconut flour, 2 tbsp oat flour, dash of cinnamon, blueberries, lemon zest)
In a pan on medium-high heat, use a cookie scoop to get batter of pancake mix on pan
Let each side cook for 2-4 minutes then flip being careful not to burn
Tips
  • Coconut yogurt is optional- can use any kind of yogurt. Preferably Greek yogurt
  • Top with coconut flakes, blueberries, etc
  • Timing is everything with this recipe. If the pancakes are frying too long, they will burn. If they fry too short, they will fall apart when trying to flip. Experiment with your stove top to to see which works for you
