What time is pumpkin mug muffin time exactly?

Well, it’s now-o-clock, when the mornings start to feel just a teeny bit cooler, all the way until the snow falls.

My absolute favorite time of year.

Though I eat pumpkin cake year round, it’s particularly seasonal right now.

Healthy Pumpkin Cake – Single Serving


If you hadn’t noticed, I love mug cakes (another current fave – this gingerbread mug cake). And from the number of saves and shares on my other mug cake recipes, I see I’m not alone! (P.S. Thank you so much for saving and sharing and trying my recipes – it means a lot to me!)

If you’re short on time and you want a yummy baked thing, they are so perfect. I love baking whole batches of cookies and muffins, etc. too but you just can’t beat a mug cake for instant gratification.

This pumpkin mug cake recipe takes a whopping 3 minutes to make. One minute of prep and two minutes to cook.

Occasionally I will split up this recipe into two espresso-sized mugs because one of those is the perfect serving for my 3-year-old. If you do this I find it’s best to microwave them separately and watch them closely in the microwave if the mug is small.

Pumpkin Mug Cake

This pumpkin mug cake is flourless – made with almond flour which isn’t really a flour at all, but ground almonds. I love the flavor of it – it tastes rich and slightly sweet and is packed with protein!

The recipe calls for pumpkin pie spice but if you want to make this asap (I don’t blame you) and don’t have any, just sub an equal amount of cinnamon.

For the sweetener, this mug cake is slightly sweetened with coconut sugar. If you’ve never tried it before, coconut sugar doesn’t taste anything like coconut – not even a little bit. It has a rich taste that is similar to brown sugar. I put a range so you can customize the taste to be more dessert-like or more breakfast-like.

If you want to substitute for a different kind of sugar, lots of kinds would work well, just keep it to a granulated sweetener. Cane sugar, brown sugar, date sugar, they would all work in this recipe.

For a keto pumpkin mug cake, use erythritol instead of the coconut sugar.

Ingredients

  • 3 tbsp almond flour
  • 1 egg free range
  • 3 tbsp pumpkin puree
  • 1-2 tbsp sugar (I used coconut sugar) or any dry sugar (use erythritol for a keto version)
  • 1/2 tsp pumpkin pie spice or you can just use cinnamon if that's what you have
Instructions

Crack the egg into a small bowl and break up the yolk.
Add the almond flour, pumpkin puree, pumpkin pie spice, and sugar.
Mix everything together with a fork or whisk.
Spray a mug or ramekin lightly with oil.
Pour in the batter.
Microwave for ~90 seconds.
Depending on your microwave you might need an extra 30-60 seconds.
Stay with it and only microwave 20 seconds at a time after the initial 90 seconds so you don't get a pumpkin mug cake explosion.
