I don’t know how I haven’t made a matcha mug cake yet.

If you’re new to Best Mug Cakes or new to me, you might not know that matcha lattes are my absolute favorite drink.

There is almost always matcha powder in my pantry. It’s a staple to me like milk or flour lol.

If you like tea in desserts, try this chai mug cake too – it’s really good. And this pumpkin mug cake was inspired by pumpkin spice lattes.


What is Matcha?


Matcha is green tea leaves ground up into a fine powder.

Instead of steeping a tea bag of leaves and then removing the tea bag, you mix the matcha powder into water or milk and drink the tea leaf powder.

You can drink it as is (and it will be kinda bitter), but it is SO good as a latte.

Best Matcha Powders


If you’re new to matcha or want some recommendations, I have tried a LOT of different matcha powders. These are my favorites:



I like the pure unsweetened matcha as well; the only thing is it can clump more than the sweetened kind.

So if you’re using the matcha powder to make a latte, make sure you mix it with a bit of hot water first before adding milk. Or you can use a milk frother (I have a simple one like this and love it).

With this matcha mug cake recipe, you’ll be mixing the matcha powder right into the flour, so you shouldn’t have any clumpy patches in your cake. It’ll just be smooth, green, deliciousness!

  • almond flour
  • egg
  • baking powder
  • granulated sugar (regular sugar, coconut sugar, monk fruit, erythritol, etc.)
  • melted butter (or oil)
  • unsweetened matcha powder
  • cream (or milk, or almond milk, soy milk, etc. – any kind you like to drink)

Tips for Making the Best Matcha Mug Cake

Mix the matcha powder in with the almond flour well, so you don’t get clumps of matcha powder in your finished mug cake. That will make it taste bitter instead of a lovely light sweet flavor.

I included a range of sugar in the ingredients: from 1-2 tablespoons. I like my mug cakes mildly sweet, so I would use 1 tablespoon. If you like your desserts sweeter, use 1.5 or 2 tablespoons of sugar.

If you use sweetened matcha powder instead of unsweetened, reduce the sugar you add by a bit.

Whenever you’re trying a new mug cake recipe, microwave on high for 1 minute. All microwaves are different and you don’t want to dry out the mug cake.

If you need more time for this matcha green tea mug cake to cook, add 15 seconds at a time until done.

My microwave took 1 minute 15 seconds to cook this mini matcha cake to perfection.

I tried making this mug cake with 1/2 teaspoon of matcha powder but it definitely needed the whole 1 teaspoon to be matcha enough.

Keto Matcha Mug Cake


It’s easy to make this matcha mug cake keto.

Almond flour is naturally keto.

You can use unsweetened matcha powder or use a keto matcha powder ( like this one).

For the granulated sweetener, use xylitol, erythritol, or monk fruit.

  • 4 tbsp almond flour
  • 1 egg
  • ½ tsp baking powder
  • 1-2 tbsp granulated sugar (depending on how sweet you like things)
  • 1 tbsp melted butter (or oil or vegan butter like Earth Balance)
  • 1 tsp unsweetened matcha powder
  • 1 tbsp cream (or milk, or almond milk, or any milk you like)
Instructions

1. Mix the almond flour, sugar, matcha powder, and baking powder in a small bowl.2. Add the egg, and stir in the cream/milk and the melted butter.3.
