Raspberry Mug Cake: Surprisingly Healthy and Tastes Like a Bakery Rasp

This raspberry mug cake is gluten-free, sugar-free, high-protein, and paleo but tastes like a bakery style sweet raspberry muffin! This raspberry muffin in a mug is kid-friendly and the perfect healthy snack or even healthy breakfast with no sugar added. I’ve had this raspberry mug cake as a single serving healthy dessert too!

Raspberries are my absolute favorite fruit. I could eat a pint or two of them every day, and my daughter and I practically go through that many raspberries.

We eat so many raspberries (and they are not exactly cheap!) that I planted a raspberry bush in the backyard. In July and August, we’ll wander outside first thing in the morning and eat fresh raspberries right off the bushes. They are warm from the morning sun, so tender you barely have to chew them, and bursting with the freshest raspberry flavor. Heaven.

Gluten-Free Raspberry Cake


This mug cake recipe is gluten-free, paleo, SO easy to make, and healthy enough for breakfast (but yummy enough for dessert!).

It’s made with almond flour, which is really just finely ground almonds, so it’s high in protein, and will keep you satisfied longer than a typical white flour baked good.

This is one of my favorite almond flours, but this gluten-free raspberry mug cake will work with any almond flour.

If you really want to make this mug cake recipe asap and you don’t need it to be gluten-free or paleo, in a pinch you can substitute regular white flour for the almond flour.

It might take a bit less or more time to cook than with almond flour, but will still be delicious!

In some of the pics, I topped my raspberry mug muffin with hemp seeds for added protein and flavor and nutrients.

You can also top it with sliced almonds, whipped cream, or coconut whipped cream.

You can leave out the almond extract if you don’t have it. I don’t want the lack of almond extract in your life to prevent you from making this delicious raspberry mug cake.

But do pick some up ( this one is great), because almond extract really brings out the sweetness of the berries. It’s my second-most used baking extract, after vanilla.

Let’s talk about a couple of different variations of this single serving healthy raspberry cake…

Chocolate Raspberry Mug Cake


To make this a chocolate raspberry mug cake (yum!) there are a couple of things you can do.

Add a handful (fistful?) of chocolate chips and stir into the batter.

Sprinkle shaved chocolate over top, either before or after microwaving the mug cake.

Stir a teaspoon of cocoa powder into the batter before cooking.

Or try all three to make this a triple chocolate raspberry mug cake!

You can also try this surprisingly healthy double chocolate mug cake.


Keto Raspberry Mug Cake

Because of the applesauce in this recipe (which keeps it clean eating, and refined-sugar-free!), this isn’t the easiest mug cake to make keto.

Applesauce and apples are not allowed on the keto diet, and not even on lazy keto or dirty keto.

If you want to make a keto raspberry mug cake, I would make this almond flour keto mug cake, and add ¼ cup of raspberries to the batter. It will be a delicious and completely keto-friendly snack, breakfast or dessert!

Ingredients

  • 4 tbsp almond flour
  • 1 egg free range
  • ½ cup applesauce (= one single-serving kids' applesauce snack)
  • 1/8 tsp almond extract
  • ½ tsp baking powder
  • 1/3 cup to ½ cup fresh raspberries
Instructions

Right in your mug, mix applesauce, egg, and almond extract.
Add almond flour and baking powder and mix.
Stir in fresh raspberries.
Microwave on high for 2 minutes; if it needs a bit more time (this will depend on your mug and microwave), add 30 seconds more.
Top with more raspberries, hemp seeds if you like them, whipped cream, coconut whipped cream, sliced almonds, etc.
