Oh Hey, Pumpkin! Best Pumpkin Muffin Recipe + Free Download Gift Tags
If you’re looking for a yummy, simple pumpkin muffin recipe that serves a crowd, look no further. I’ve adapted it over the years, adding flaxseed meal to give it (a little) health boost.
This is a great one to bake and share. With the start of online virtual learning and for those working at home, this makes a quick grab-and-go snack for breaks.

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.
In a separate bowl, whisk together the flour, baking soda, spices & salt.
Stir the dry ingredients into the pumpkin mixture until just blended.
Pour into the prepared muffin pans.
Bake for 25-28 minutes. Makes about 26-30.
These muffins are even better the second day, which is a perfect time to package and share.
With that in mind for this batch and because we’re missing our people, we made little gift tags to package up and drop off.
This is so simple. Use a clear plastic cup and stack three muffins. Cover the cup and muffins using a small clear gift bag. You can get both of these items at the dollar store.

Best Pumpkin Muffins
- 1 (15 ounce) can organic pumpkin puree
- 4 eggs
- 1 cup organic coconut oil (melt to liquid)
- ⅔ cup water
- 3 cups organic white sugar
- 3 cup unbleached flour
- ½ cup flaxseed meal
- 2 teaspoons baking soda
- 1½ teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
Instructions
- Preheat oven to 350F. Use paper cup liners in a muffin pan.
- In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.
- In a separate bowl, whisk together the flour, baking soda, spices & salt.
- Stir the dry ingredients into the pumpkin mixture until just blended.
- Pour into the prepared muffin pans.
- Bake for 25-28 minutes. Makes about 26-30.
