Ingredients
Cake Ingredients
  • 2-3 Ripe Bananas 
  • 1/3 Cup Vegetable Oil or Olive Oil (You can substitute melted coconut oil) 
  • 2 Teaspoons of Baking Powder
  • 1/2 Cup of Sugar
  • 1 Egg
  • 1/2 Cup of Milk  
  • 1 Teaspoon of Vanilla Extract 
  • 1 1/2 Cup of All Purpose Flour 
  • Salt to Taste
Cinnamon Sugar Streusel
  • 1/3 Cup of Sugar 
  • 2/3 Cup + 1 Tablespoon of All Purpose Flour 
  • 1/4 Cup of Coconut Oil (you can substitute butter, but it won’t be vegan)
  • 1 Teaspoon of Ground Cinnamon 
  • Optional: 1/4 Cup Chopped Pecans 
Butter Cream Drizzle
  • 1/2 Cup Icing Sugar 
  • 1 Tablespoon Vegan Butter (you can substitute regular butter, however it won’t be vegan) 
  • 1/2 Tablespoon Dairy Free Milk (you can use regular milk, however it won’t be vegan)
  • 1/4 Teaspoon Pure Vanilla Extract 
Instructions

Preheat oven to 350 degrees F 
First, make your cinnamon sugar streusel: combine sugar, flour, coconut oil and cinnamon. Mix until a crumble forms. Set aside.
In a large mixing bowl, cream together the coconut oil and sugar. Next, mash or puree your bananas. Add the mashed bananas, egg and vanilla to your sugar mixture and mix until blended. Set aside. 
In a separate bowl, whisk flour, baking soda and salt. 
Combine flour mixture with banana mixture; stir just to moisten. 
Pour batter into a greased 6 inch cake pan.
Sprinkle your cinnamon sugar streusel evenly over your batter. 
Optional: Sprinkle chopped pecans evenly over the batter. 
Bake in your preheated oven for 60- 70 minutes or until a tooth pick inserted comes out clean.
While your cake is baking, make the butter cream drizzle: Combine all of the ingredients until smooth. Drizzle over your cake once baked and cooled.

    If I don't have enough bananas, can I substitute baby food bananas?

    I found this recipe confusing. In the ingredients list it mentions 2 tsp of baking powder but in the directions it says to add your baking soda. Also the ingredients mentioned 1/2 c milk but it is not mentioned in the directions so I added it with other. Wet ingredients. I also did not have a 6” cake pan so I used an 8” pan and the batter barely fit so I’m not sure what size pan is appropriate. Fingers crossed it comes out ok 😊
