I'm all for traditions around the holidays. Especially when it comes to my menu for Thanksgiving. But sometimes I struggle with dessert. On one hand I love the traditional desserts that usually show up on the table for Thanksgiving. Pumpkin pie, Apple pie, etc. But there are times I would just like to change things up a bit! Last year I decided to do just that and instead of the traditional pie, I made these Mini Pumpkin Cheesecakes! They were so easy to make because they are semi-homemade, and they ended up being a big hit with all of our family! In fact, no one even missed the usual pie!
Mini Pumpkin Cheesecakes

Ingredients
- 1 6 count mini ready graham pie crusts
- 1 15 oz can of pumpkin
- 2 tablespoons white sugar
- 2 teaspoons pumpkin pie spice
- 1 8 oz cream cheese room temperature
- whipping cream (optional)
- ground cinnamon (optional)
Instructions
- Combine pumpkin, cream cheese, sugar, and pumpkin pie spice in a large bowl. Whip until fluffy.
- Spoon into mini crusts.
- Top with whipped cream and a pinch of ground cinnamon.

I was just reading the recipe. I think 2 Tablespoons pumpkin pie spice is a bit much. I'm fairly certain they meant 2 teaspoons. Lol
I’m excited to make this with my granddaughters, 6 and 8. Quick, easy, fun and tasty!
