This cake is a really fun one to make. It looks so impressive but doesn't take to long. My best tip definitely be the frosting, it really upgrades the cake! It's very simple, all you need is about one cup of powdered sugar and a few teaspoons of water. I added in some caramel sauce to give it a nice, golden color, but you can just as easily use dissolved coffee (and use less water). Sprinkle some crushed walnuts on top and you've got yourself a homemade masterpiece! Present this cake on a cake stand to add a wow factor, and cover with a cake cover to keep fresh for a few days.

Ingredients

  • 2 cups plain flour
  • 2 tsp baking powder
  • 1 cup brown sugar
  • 4 eggs
  • 200 ml canola oil
  • 1 tsp vanilla extract
  • 1/2 cup date syrup
  • 1/2 cup walnuts, roughly chopped
Instructions

Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit).
Spray a Bundt cake tin with oil and set aside.
In a small bowl, mix together the flour and baking powder and sugar
In a larger bowl, combine the eggs, oil, vanilla and date syrup.
Add in the flour mixture. Gently fold in the walnuts.
Place mixture in the prepared tin and place in the oven.
Let it bake for 35 - 40 minutes or until an inserted skewer comes out clean.
Let the cake sit for 5 minutes before running a knife around all the edges (also along the edges of the hole in the middle) but let it cool down completely before flipping the cake onto a serving platter.
